Cheeseburger Breakfast Recipe

8 ounces lean hamburger
Salt and pepper to taste.  (usually about ¼  tsp each)
1 tsp minced garlic

On medium heat, brown hamburger in frying pan.  Rinse excess grease in colander and return to pan.  Add minced garlic, salt and pepper. 

This should make about 6 ounces cooked and set aside. 

I place this in the refrigerator for the morning.
3/4 cup eggbeaters (I like the cheese and chive flavor or Southwest)
Salt and Pepper (dash of each)
1 ounce shredded fat free cheddar cheese (I like lifetime brand found at Publix) 2 ounce of cooked hamburger
Heat omelet pan on med heat and spray with Pam (I like the olive oil flavor).  Place hamburger in pan and heat, add eggbeaters.  Cook eggs until almost finished, while cooking use a spatula to lift bottom and let the runny egg run under the mixture to allow the top to cook.  When almost cooked flip over to finish cooking the other side.  Top with cheese.  May fold over into omelet or just serve.  Cut in half and enjoy.  Good with ketchup.

Greek Frittata


3/4 cup egg beaters
1 cup spinach
1/2 cup sliced mushrooms
1 ounce fat free feta cheese (1/4 cup)
1/4 cup finely diced onions
Pam olive oil spray

Heat oven to 325 In medium omelet pan (suggest 8” that is also rated for oven use) spray with Pam nonstick spray.  Sauté onion and mushrooms until tender, then add spinach.  Allow spinach to wilt; add egg beaters.  Use rubber spatula to lift mixture to allow uncooked portion to run under eggs.  Top with feta cheese and place in oven until top is cooked and cheese melted - usually about 10 minutes.   Remove from oven and cut into quarter pieces.  May place the leftovers in the refrigerator and reheat for later use.


Rocky Road Double Chocolate Protein Shake


8 ounces Unsweetened Chocolate or Vanilla Almond Breeze
1/2 Cesar Lara Rocky Road Protein bar
3 packets Truvia or Splenda
1 heaping Tbsp Vital Whey Protein (1/2 scoop)
1 tsp Hershey’s Dark Chocolate Cocoa Powder
6-8 ice cubes

Cut Protein Bar into small pieces and shave a small amount of chocolate from bar (set aside shaved chocolate).  Place all ingredients into blender, except for shaved chocolate.  Blend until smooth.  Top with chocolate shavings. 

Entire Shake = 2 1/2 protein servings + 3/4 fruit
You may also add 2 frozen strawberries which would increase fruit serving to 1.
